My fried catfish is a big hit with the girls. They snub flounder, calapia, etc. and only want fried cafish. I've been using duck fat to fry potato slices and saute onions and stuff. I love it. Got a good bernaise down and poive vert sauce. Making tarts a lot, love making pastry cream. I have so much planned for thanksgiving, it will be constant food and desserts.

ReplyDeleteI love anything fried and coming from the south just add a little tartar sauce and don't forget them hush puppies!
